The culinary treats of Santa Rosa’s Michelin-Starred restaurant, Il Refetorio, are as unique as the monastery itself. Our distinguished Executive Chef Christoph Bob has created an innovative Mediterranean gastronomic experience for the most discerning palate with the freshest ingredients from the surrounding Campania region. Christoph has worked in some of the world’s most celebrated restaurants, but amore drew him to the Amalfi Coast and to our prized kitchen. Married to a woman from the Amalfi Coast, Christoph muses, “I not only fell in love with my wife, I fell in love with the destination and its food. Nowhere on earth does the sun and the soil give us such richness of flavors as do the fresh produce, herbs, and seafood found right here on our coast.”

Chef Bob’s insatiable love affair with food is reflected in every delectable dish on the menu. Precision-perfect flavors focusing on the bounty of the sea combine in his specialties like the appetizer trio of crustaceans—lobster with chickpea puree and smoked olive oil broad bean salad with Colonnata’s bacon and king prawn ravioli with Corbara’s tomatoes and candied lemon. Or relish main course mouthwatering fusilli with baby squids, Piennolo’s tomatoes and basil-scented aubergines. With Monastero Santa Rosa’s own herb and vegetable garden on site, every morsel combines the freshest local, organic ingredients of Conca dei Marini.

As a basis for his cooking, Chef Bob uses a 100% Italian special select olive oil produced especially for the kitchen of the Monastero Santa Rosa Hotel & Spa. This beautiful extra virgin olive oil from Conca dei Marini is called Il Mulino della Signora, meaning “the mill of the lady.” The Chef also sourced the finest quality pasta, the famed Pastificio dei Campi Gragnano, and created a shape that is unique for his Amalfi Coast restaurant. Pastificio dei Campi is arguably the best production of pasta in Italy, bronze drawn, slowly dried, and prepared in a traditional way respecting the environment.

The Chef’s innovative creations are inspirational. However, with a boutique hotel of just 20 rooms, the culinary team will be delighted to design personalized dining experiences, together with our Sommelier, to cater to individual tastes and palates.

Or indulge in Mediterranean haute cuisine indoors under vaulted ceilings in the intimate formal dining room. During the day, dine outdoors aside the infinity pool or among the terraced cascading gardens.
